[原创]"私房菜“-像牛奶般白暂又鲜美可口的鲫鱼汤

<p class="MsoNormal" style="MARGIN: 0cm 0cm 0pt;"><span class="tpccontent1"><span style="FONT-SIZE: 10pt; COLOR: #3e3e3e; FONT-FAMILY: 宋体; mso-ascii-font-family: Tahoma; mso-hansi-font-family: Tahoma; mso-bidi-font-family: Tahoma;">奶汤鲫鱼是一道传统菜,其制法是将洗净的鲫鱼两面煎黄后,再放入锅中加清水炖煮,当煮至汤色浓白时,再调味起锅。由于其成菜要求汤白似乳,故将鲫鱼煎黄后,一般要掺入冷水慢慢炖煮,以使鲫鱼内部的可溶性蛋白质充分地溶解到汤中,从而使汤味醇厚鲜美。</span></span><span class="tpccontent1"><span lang="EN-US" style="FONT-SIZE: 10pt; COLOR: #3e3e3e; FONT-FAMILY: Tahoma;">
